My GF, Locavore-ish Weekly Meal Plan and What's Cookin' Sunday?



I must confess that the hint of cooler weather we had last week has been such a tease.  My apologies to those still enjoying the oppressive humidity, but I'm ready for fall, or at least fresh air that doesn't make me feel like my head is being crushed! 

When it comes to cooking in the heat I often find myself at a loss because I just don't want to be in the kitchen when the air conditioning unit is around the corner in the living room. 

So once again my meal plan and Sunday cooking is based around local farmers market produce and simple, quick meals for cooking in the heat. 


So without further ado, here's this week's gluten free, locavore-ish meal plan!



Week of: September 7
In the Freezer: frzn mixed veggies, spinach & peas,  Flaxmeal Sandwich Bread, black & kidney beans, Beet Chocolate Muffins, blueberries, chicken thighs, Homemade Limoncello
In the Fridge: kale, mixed greens, homemade yogurt, fingerling potatoes, carrots, zucchini, cucumber, Grandma’s Pickles, baby eggplant, broccoli, peppers, Gluten Free Hot Cross Buns (recipe to come!), eggs, apples, grapes, cabbage, salsa
In the Cupboard: lentils, beans, chickpeas, GF flours, rice vermicelli, rice noodles, canned fruit, Organic local corn meal, organic local popcorn kernels
Breakfasts: Farmers Market Omelette, Beet Chocolate Muffins, Steamed Greens and Poached Eggs, GF Hot Cross Buns (recipe to come!)
Day:
Dinners
Saturday
Fajita Salad with rice, then going to a party and taking Herb Rolls (Middle Eastern style) 
Sunday
Monday
GF, Soy- Free Stir Fry and Miso Soup (then off to our first Bachata lesson, woohoo!!)
Tuesday
Giant chicken salad with mixed greens and grapes
Wednesday
Thursday
Herb and Tuna Pasta Salad after a day at the zoo!!
Friday
Hubby is out so I might just eat a big salad or steamed kale & rice, make some Organic Chocolate Caramel Popcorn, sip some Limoncello, and watch a movie ; )
Saturday
Planning an extra day ahead because hubby has asked if he can make stew on Sat, which I’m totally happy with : )
Snacks: Grandma’s Pickles,  homemade yogurt with fruit,
